Place an oven-safe pan (see notes) on the stove on medium-high heat and olive oil. I couldnt find Madeira wine, so I used sweet vermouth instead. After the first time, my husband didnt need to be convinced to finally get an oven safe pan. Im so glad you loved it, Pat.
